Oenococcus oeni is a lactic acid bacteria adapted to the low pH, high ethanol environment of wine and cider fermentation. It mutates rapidly, is highly specialized, and has a small genome of 1.7-2 mb. It is of great interest to industry due to the importance of malolactic fermentation.Previously, several authors has proposed population structures of Oenococcus oeni, but a consensus had not been reached.Here, 9 new strains isolated from cider and 5 from kombucha were sequenced, annotated, and added to the available genetic sequences of O. oeni to perform comparative genomics analyzes.
