Lactobacillus acidophilus, originally isolated from the infant feces and commonly found in the human gastrointestinal tract, is characterized as an facultative anaerobic Gram-positive bacterium with elongated rod-shaped form. The optimum growth temperature of Lactobacillus acidophilus is about 35-45 Centigrade, while the optimum fermentation pH ranges from 4.0 to 6.5. Lactobacillus acidophilus has been certified as GRAS (Commonly Recognized as Safe, GRAS) by the European Union with the long-term validation of clinical trials.
